Pairing: Stoney Wines’ 2021 Bayani Reserve (Pinot Noir)

Why This Pairing Works: The earthy, delicate flavors of this Pinot Noir beautifully complement the umami richness of mushrooms and the subtle herbaceous notes in this dish. Its smooth tannins and gentle acidity create a perfect harmony with the savory crostini, making this pairing ideal for holiday gatherings.




Savory Herb & Mushroom Crostini

Ingredients (Makes 12 Crostini):

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 clove garlic, minced
  • 8 oz cremini or button mushrooms, finely chopped
  • 1/4 cup shallots, finely diced
  • 1/4 cup dry white wine (or vegetable broth)
  • 1 tsp fresh thyme, chopped
  • 1/2 tsp fresh rosemary, chopped
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

  Instructions:

  1. Prepare the Crostini:
    • Preheat your oven to 375°F (190°C). 
    • Brush the baguette slices with olive oil on both sides and arrange them on a baking sheet.
    • Bake for 6-8 minutes, flipping halfway through, until golden and crisp. Set aside.
  2. Cook the Mushroom Mixture: 
    • In a skillet, melt the butter over medium heat.
    • Add the garlic and shallots, sautéing until fragrant and softened (about 2 minutes).
    • Add the chopped mushrooms, cooking until they release their liquid and begin to brown (5-7 minutes).
    • Deglaze the pan with white wine or broth, stirring until the liquid has mostly evaporated.
    • Stir in the thyme, rosemary, salt, and pepper. Adjust seasoning to taste.
  3. Assemble the Crostini:Spoon the mushroom mixture onto each crostini. If desired, sprinkle with grated Parmesan cheese for an extra savory touch.
  4. Garnish and Serve:
    • Top with fresh parsley for a pop of color and serve warm alongside a glass of 2021 Bayani Reserve Pinot Noir.
