Hearty Winter Beef Stew with Root Vegetables

Ingredients (Serves 4-6):

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup dry red wine (optional, but adds depth; use a bit of the A Colorful World Cab Franc for an extra touch!)
  • 3 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 4 medium carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 2 large Yukon gold potatoes, diced
  • 1 cup frozen peas
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Sear the Beef
    • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
    • Season the beef with salt and pepper, then sear the pieces in batches until browned on all sides. Remove and set aside.
  2. Build the Base
    •  In the same pot, sauté the onion until softened, about 5 minutes.
    •  Add the garlic and cook for another minute until fragrant.
  3. Deglaze & Simmer
    • Stir in the tomato paste, cooking for 1-2 minutes.
    •  Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes to reduce slightly.
  4. Add Liquids & Spices
    • Return the beef to the pot and add the beef broth, Worcestershire sauce, smoked paprika, thyme, and bay leaf. Bring to a boil, then reduce to a simmer. Cover and cook for 1 hour.
  5. Add Vegetables
    • Add the carrots, parsnips, and potatoes. Continue to simmer, covered, for another 30 minutes, or until the vegetables are tender.
  6. Finish with Peas & Garnish
    • Stir in the frozen peas and cook for an additional 5 minutes. Adjust seasoning with salt and pepper.
  7. Serve & Pair
    • Ladle the stew into bowls and garnish with fresh parsley. Pair with a glass of A Colorful World Cabernet Franc for a cozy, satisfying meal.
