Seared Scallops with Strawberry-Balsamic Glaze  

This elegant and easy-to-make dish perfectly complements the fruity and refreshing profile of the Rosé of Pinot Noir. The sweet and tangy strawberry-balsamic glaze enhances the rosé's berry notes, creating a harmonious pairing.

Ingredients: (Serves 2)

  • 8 large sea scallops, patted dry  
  • 2 tbsp olive oil  
  • Salt and freshly ground black pepper, to taste  
  • 1/2 cup fresh strawberries, diced  
  • 2 tbsp balsamic vinegar  
  • 1 tbsp honey  
  • 1 tbsp unsalted butter  
  • Fresh thyme or microgreens for garnish (optional)

Instructions:

  1. Prepare the Glaze: In a small saucepan over medium heat, combine the diced strawberries, balsamic vinegar, and honey. Simmer for 5-7 minutes, stirring occasionally, until the mixture thickens slightly and the strawberries break down. Remove from heat and set aside.  
  2. Sear the Scallops: Heat olive oil in a large skillet over medium-high heat. Season the scallops with salt and pepper on both sides. Add them to the skillet and sear for about 2-3 minutes per side, until they develop a golden crust and are just cooked through. Remove from the skillet and keep warm.  
  3. Finish the Sauce: Stir the butter into the strawberry-balsamic glaze until smooth and glossy.  
  4. Plate the Dish: Arrange the scallops on a plate and drizzle with the strawberry-balsamic glaze. Garnish with fresh thyme or microgreens for a touch of elegance.  
  5. Serve & Pair: Serve the scallops immediately with a chilled glass of Vintner's Reserve - Rosé of Pinot Noir. Savor the way the dish's sweet and tangy flavors complement the wine's bright fruitiness.  

Pro Tip: Add a simple side of arugula salad with a light lemon vinaigrette to balance the dish and complete the romantic meal.
