Savory Herb-Crusted Pork Tenderloin with Cherry-Balsamic Sauce
Ingredients (Serves 4):
For the Pork Tenderloin:
- 2 pork tenderloins (about 1 lb each)
- 2 Tbsp olive oil
- 1 Tbsp Dijon mustard
- 1 Tbsp fresh rosemary, minced
- 1 Tbsp fresh thyme, minced
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
For the Cherry-Balsamic Sauce:
- 1 cup frozen or fresh cherries, pitted
- 1/3 cup balsamic vinegar
- 1/4 cup chicken or vegetable stock
- 1 Tbsp honey
- 1 tsp fresh thyme leaves
- 1/4 tsp black pepper
- Pinch of salt
Instructions:
Step 1: Prepare the Pork Tenderloin
- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloins dry and rub them with olive oil.
- In a small bowl, combine Dijon mustard, rosemary, thyme, garlic powder, salt, and pepper. Spread the mixture evenly over the tenderloins.
Step 2: Cook the Pork
