Lemon Herb Chicken with Roasted Winter Vegetables

Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 Tbs fresh lemon juice (about 1 lemon)
  • 1 Tbs lemon zest
  • 3 garlic cloves, minced
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1 Tbs fresh parsley, chopped (plus extra for garnish)
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Vegetables:

  • 2 cups Brussels sprouts, halved
  • 2 cups butternut squash, peeled and cubed
  • 1 large red onion, cut into wedges
  • 2 Tbs olive oil
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  • Preheat the oven to 400°F (200°C).Line a large baking sheet with parchment paper or lightly grease it.
  • Marinate the chicken: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, parsley, salt, and pepper. Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Let them marinate for at least 20 minutes (or up to 2 hours in the refrigerator).
  • Prepare the vegetables: Toss the Brussels sprouts, butternut squash, and red onion with olive oil, rosemary, salt, and pepper. Spread them out on the prepared baking sheet.
  • Bake the vegetables: Roast in the oven for 15 minutes.
  • Add the chicken: Push the vegetables to one side of the baking sheet and add the marinated chicken breasts to the other side. Pour any remaining marinade over the chicken.
  • Continue roasting: Roast for another 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are golden and tender.
