Savory Braised Lamb Shanks with Root Vegetables
Ingredients (Serves 4):
For the Lamb Shanks:
- 4 lamb shanks
- 2 Tbs olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup red wine (Cabernet Franc recommended)
- 2 cups beef or chicken stock
- 2 Tbs tomato paste
- 2 sprigs fresh rosemary
- 1 sprig fresh thyme
- 1 bay leaf
- Salt and black pepper, to taste
For the Root Vegetables:
- 2 cups parsnips, peeled and cubed
- 2 cups turnips, peeled and cubed
- 1 cup sweet potatoes, peeled and cubed
- 2 Tbs olive oil
- 1 tsp fresh rosemary, chopped (or ½ tsp dried)
- ½ tsp salt
- ¼ tsp black pepper
Instructions:
Step 1: Prepare the Lamb Shanks
- Preheat your oven to 325°F (160°C).
- Season the lamb shanks with salt and pepper. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the lamb shanks on all sides until golden brown.
- Remove and set aside.
Step 2: Build the Braise
- In the same pot, add the onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes. Stir in the tomato paste and cook for another minute. Deglaze the pot with red wine, scraping up any browned bits.
- Add the stock, rosemary, thyme, and bay leaf. Return the lamb shanks to the pot, ensuring they are partially submerged in the liquid. Bring to a simmer, cover, and transfer to the oven. Braise for 2 to 2.5 hours, or until the lamb is tender and falling off the bone.
Step 3: Roast the Vegetables
- While the lamb is braising, prepare the vegetables. Toss the parsnips, turnips, and sweet potatoes with olive oil, rosemary, salt, and pepper. Spread them evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, or until golden and tender, tossing halfway through cooking.
Step 4: Assemble & Serve
- Remove the lamb shanks from the oven and skim off any excess fat from the surface of the braising liquid. Discard the rosemary, thyme, and bay leaf.
- Plate the lamb shanks alongside the roasted vegetables. Drizzle with some of the braising liquid and garnish with fresh rosemary if desired.
