Why This Pairing Works: The creamy sauce mirrors the wine’s smooth texture from malolactic fermentation. Lemon and thyme bring out the wine’s fresh floral notes. Roasted garlic adds depth, complementing the Chardonnay’s oak aging. Light-bodied yet flavorful, this wine balances the dish without overpowering it.




Creamy Lemon Thyme Chicken with Roasted Garlic

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients (Serves 2):

  • 2 boneless, skinless chicken breasts
  • 1 head garlic
  • 2 Tbs olive oil, divided
  • 2 Tbs unsalted butter
  • 1 small shallot, finely diced
  • ½ cup dry white wine (or chicken broth)
  • ½ cup heavy cream
  • Zest and juice of 1 lemon
  • 1 tsp fresh thyme leaves
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper
  • ¼ cup grated Parmesan
  • 2 Tbs chopped fresh parsley

Instructions:

Step 1: Roast the Garlic

  • Preheat oven to 375°F.
  •  Slice the top off the garlic head, drizzle with 1 tsp olive oil, and wrap in foil.
  •  Roast for 30–35 minutes, until soft and golden. Set aside.

Step 2: Sear the Chicken

  • Heat 1 Tbs olive oil and butter in a large skillet over medium-high heat.
  •  Season chicken with salt and pepper.
  •  Sear for 4–5 minutes per side until golden brown. Remove and set aside.

Step 3: Make the Sauce

  • In the same skillet, add shallots and cook for 2 minutes.
  •  Pour in white wine, scraping up any browned bits. Simmer for 2 minutes.
  •  Squeeze roasted garlic cloves into the sauce and mash with a spoon.
  •  Stir in cream, lemon zest, lemon juice, and thyme.
  •  Reduce heat to low and let the sauce thicken for 3 minutes.

Step 4: Finish & Serve

  • Return chicken to the pan and spoon sauce over the top. Simmer for 5 minutes until cooked through.
  •  Sprinkle with Parmesan and fresh parsley.
  •  Serve with roasted potatoes or crusty bread to soak up the sauce.
