Apricot Herb Chicken with Honey Butter Sauce

Ingredients (Serves 2):

  • 2 boneless, skinless chicken breasts
  •  ½ cup dried apricots, chopped
  •  2 Tbs honey
  •  1 Tbs unsalted butter
  •  1 Tbs olive oil
  •  1 small shallot, finely diced
  •  ½ cup dry white wine (or chicken broth)
  •  1 tsp Dijon mustard
  •  ½ tsp fresh thyme leaves
  •  ¼ tsp salt
  •  ¼ tsp black pepper
  •  1 Tbs chopped fresh parsley

Instructions:

Step 1: Sear the Chicken

  • Heat olive oil and butter in a large skillet over medium-high heat.
  •  Season chicken with salt and pepper.
  •  Sear for 5 minutes per side until golden brown. Remove and set aside.

Step 2: Build the Sauce

  • In the same skillet, add shallots and cook for 2 minutes.
  •  Pour in white wine, scraping up browned bits. Simmer for 2 minutes.
  •  Stir in Dijon mustard, honey, dried apricots, and thyme. Cook for 3 minutes.

Step 3: Finish & Serve

  • Return chicken to the skillet and spoon sauce over the top.
  •  Cover and let simmer for 5 minutes until chicken is cooked through.
  •  Sprinkle with fresh parsley and serve with roasted potatoes or a simple salad.
