Spring Pea and Asparagus Risotto with Lemon & Mint
Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients (Serves 2):
- ¾ cup arborio rice
- 3 cups vegetable broth (kept warm)
- ½ cup dry white wine
- 1 Tbs olive oil
- 2 Tbs unsalted butter, divided
- 1 small shallot, finely diced
- 1 garlic clove, minced
- ½ cup fresh peas (or frozen, thawed)
- ½ cup asparagus, trimmed and sliced
- Zest of 1 lemon
- 1 Tbs fresh lemon juice
- ¼ cup grated Parmesan
- 2 Tbs chopped fresh mint
- Salt and freshly cracked black pepper, to taste
Instructions:
Step 1: Start the Risotto
- Heat olive oil and 1 Tbs butter in a pan over medium heat.
- Add shallots and garlic. Sauté for 2 minutes until fragrant.
- Stir in arborio rice. Cook for 1 minute until lightly toasted.
Step 2: Add Wine & Broth
- Pour in white wine, stirring until absorbed.
- Add warm broth, one ladle at a time, stirring frequently.
- Let each addition absorb before adding more. Continue for 18–20 minutes.
Step 3: Stir in Spring Veggies
- When rice is tender and creamy, stir in peas and asparagus.
- Cook for 3–4 minutes until bright green and tender.
- Remove from heat. Stir in Parmesan, lemon zest, lemon juice, and remaining butter.
- Season with salt and pepper. Fold in fresh mint.
Step 4: Serve & Enjoy
- Spoon onto plates and top with extra Parmesan and mint.
