Grilled Harissa Lamb Chops with Charred Spring Vegetables

Ingredients (Serves 2):

For the Lamb Chops:

  • 4 lamb rib chops
  • 1½ Tbs harissa paste
  • 1 Tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon

For the Charred Spring Vegetables:

  • ½ bunch asparagus, trimmed
  • ½ cup sugar snap peas
  •  3 radishes, halved
  •  ½ small red onion, cut into wedges
  •  1 tbsp olive oil
  •  Salt & pepper, to taste
  •  Juice of ½ lemon

For Garnish:

  • 2 tsp crumbled feta cheese
  • 1 Tbs chopped fresh mint
  •  Lemon wedges

Instructions:

Step 1: Marinate the Lamb

  • In a small bowl, mix harissa paste, olive oil, smoked paprika, cumin, salt, pepper, and lemon juice.
  • Rub the mixture onto lamb chops and let them marinate for at least 30 minutes (or up to overnight).

Step 2: Grill the Vegetables

  • Preheat grill or grill pan to medium-high heat.
  • Toss asparagus, snap peas, radishes, and red onion with olive oil, salt, and pepper.
  • Grill for 3–4 minutes per side until slightly charred but still crisp.
  • Remove from heat and drizzle with fresh lemon juice.

Step 3: Grill the Lamb

  • Increase grill heat to high.
  • Grill lamb chops for 3–4 minutes per side for medium-rare, or longer if desired.
  • Let rest for 5 minutes before serving.

Step 4: Serve & Enjoy

  • Arrange lamb chops with charred vegetables on a serving platter.
  • Sprinkle with feta and fresh mint.
  • Serve with lemon wedges and a glass of 2021 A Colorful World - Cabernet Franc.
