Grilled Lamb Skewers with Strawberry-Mint Salsa & Whipped Feta

Ingredients:
Lamb Skewers
- 2 lbs lamb leg or shoulder, cut into 1½-inch cubes
- 3 Tbs olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cinnamon
- 1 tsp smoked paprika
- Salt and pepper
- 8-10 wooden or metal skewers (soak wooden skewers 30 minutes)
Strawberry-Mint Salsa
- 2 cups fresh strawberries, diced
- ¼ cup red onion, finely diced
- 2 Tbs fresh mint, chopped
- 1 Tbs fresh basil, chopped
- 1 Tbs olive oil
- 1 Tbs balsamic vinegar
- 1 tsp honey
- Pinch of red pepper flakes
- Salt and pepper
Whipped Feta
- 8 oz feta cheese
- ¼ cup Greek yogurt
- 2 Tbs olive oil
- 1 Tbs lemon juice
- Black pepper
To Finish
- Fresh mint leaves
- Lemon wedges
- Flaky sea salt
Instructions:
Step 1: Marinate the Lamb
- In a large bowl, combine olive oil, garlic, cumin, coriander, cinnamon, paprika, salt, and pepper. Add lamb cubes and toss to coat. Cover and marinate 30 minutes at room temperature (or up to 4 hours refrigerated).
Step 2: Make the Strawberry Salsa
- Combine strawberries, red onion, mint, basil, olive oil, balsamic, honey, red pepper flakes, salt, and pepper in a bowl. Toss gently and let sit at room temperature while you grill.
Step 3: Make the Whipped Feta
- In a food processor, combine feta, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, about 1-2 minutes. Transfer to a serving bowl.
Step 4: Skewer the Lamb
- Thread marinated lamb onto skewers, leaving small spaces between pieces for even cooking.
Step 5: Grill
- Preheat grill to medium-high heat (about 400°F). Oil the grates. Grill skewers 8-10 minutes total, turning every 2-3 minutes, until charred on the outside and medium-rare inside (internal temp 135°F). Rest 5 minutes.
Step 6: Serve
- Spread whipped feta on a platter. Top with grilled lamb skewers and spoon strawberry-mint salsa over everything. Garnish with fresh mint, lemon wedges, and flaky salt.
