Garlic Butter Shrimp Skewers with Lemon-Herb Orzo

Ingredients:

Shrimp Skewers

  • 1½ lbs large shrimp, peeled & deveined
  • 4 Tbs butter, melted
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • Salt and pepper
  • 8 skewers (soak wooden ones 30 min)

Lemon-Herb Orzo

  • 1½ cups orzo pasta
  • 3 Tbs olive oil
  • Zest & juice of 2 lemons
  • 2 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • 2 Tbs fresh dill, chopped
  • ¼ cup grated Parmesan
  • Salt and pepper

To Finish

  • Fresh parsley or dill
  • Lemon wedges
  • Flaky sea salt

Instructions:

Step 1: Marinate the Shrimp

  • In a bowl, combine melted butter, garlic, smoked paprika, salt, and pepper. Add shrimp and toss to coat. Let sit 10 minutes while you prep the orzo.

Step 2: Cook the Orzo

  • Bring a large pot of salted water to a boil. Cook orzo according to package directions until al dente. Drain well.

Step 3: Make the Orzo Dressing

  • While orzo cooks, heat olive oil in a small skillet over medium heat. Add garlic and cook 1 minute until fragrant. Remove from heat and stir in lemon zest and lemon juice.

Step 4: Thread the Skewers

  • Thread marinated shrimp onto skewers, 4–5 shrimp per skewer.

Step 5: Grill the Shrimp

  • Preheat grill to medium-high heat (about 400°F). Oil the grates. Grill skewers 2–3 minutes per side until shrimp are pink and just cooked through.

Step 6: Finish the Orzo

  • Toss warm orzo with the lemon-garlic oil, parsley, dill, and Parmesan. Season with salt and pepper.

Step 7: Serve

  • Plate orzo and top with grilled shrimp skewers. Garnish with fresh herbs, lemon wedges, and flaky salt.
