Lemon Herb Chicken Cutlets with Summer Tomato & Corn Salad
Lemon Herb Chicken Cutlets with Summer Tomato & Corn Salad
August calls for dinners that are bright, fast, and built around the best produce of the season — and this one checks every box.
Thin chicken cutlets get a quick dredge in lemon zest and fresh herbs, then hit a hot skillet for just a few minutes until golden and crispy. Alongside, a no-cook salad of peak-season heirloom tomatoes, sweet corn, and fresh basil comes together in minutes. The whole plate is bright, summery, and on the table in under half an hour.
Paired with our 2021 SisterFriends – Chardonnay, this dish sings. The wine's white floral and vanilla notes complement the lemon herb crust beautifully, while its buttery texture mirrors the golden pan-seared chicken. Bright acidity lifts the fresh tomato salad and keeps every bite feeling light despite the richness. This is a natural Chardonnay food pairing that shows exactly what wine pairs with chicken when you want something easy and elegant.
Light, bright, and made for August.

Chicken Cutlets
- 4 boneless, skinless chicken breasts, pounded thin
- Zest of 2 lemons
- 2 Tbs fresh thyme leaves
- 2 Tbs fresh flat-leaf parsley, finely chopped
- 3 Tbs olive oil
- 2 garlic cloves, minced
- Salt and black pepper
Summer Tomato & Corn Salad
- 2 cups heirloom tomatoes, sliced or halved
- 2 ears fresh corn, kernels cut from cob
- ¼ cup fresh basil leaves, torn
- 2 Tbs extra virgin olive oil
- 1 Tbs fresh lemon juice
- Flaky sea salt and cracked black pepper
To Finish
- Lemon wedges
- Fresh parsley or basil
- Flaky sea salt
Method
Make the Tomato & Corn Salad
Combine tomatoes, raw corn kernels, and torn basil in a bowl. Drizzle with olive oil and lemon juice, then season generously with flaky salt and cracked pepper. Toss gently and set aside at room temperature — the tomatoes will release their juices as they sit, making a light natural dressing.
Season the Chicken
In a small bowl, combine lemon zest, thyme, parsley, garlic, 1 Tbs olive oil, salt, and pepper. Rub the mixture evenly over both sides of each chicken cutlet.
Cook the Chicken
Heat remaining 2 Tbs olive oil in a large skillet over medium-high heat. Add cutlets and cook 3–4 minutes per side until golden and cooked through (internal temp 165°F). Work in batches if needed — don't crowd the pan. Rest 3 minutes before serving.
Plate & Serve
Arrange chicken cutlets on plates or a platter. Spoon the tomato and corn salad alongside, letting the juices run naturally over the chicken. Finish with fresh herbs, lemon wedges, and a pinch of flaky salt.
Chef Tips
- Pound the chicken to an even thickness — it cooks faster, more evenly, and stays juicier.
- Use the ripest tomatoes you can find — this salad lives and dies by tomato quality in August.
- The corn is raw — peak summer corn is sweet enough that it doesn't need cooking. Trust it.
- Add a handful of arugula to the salad for a peppery kick that works beautifully with the Chardonnay.
Suggested Pairings
- Crusty bread to soak up the tomato juices
- Simple arugula salad with lemon vinaigrette
- Chilled orzo or farro with fresh herbs
Here's to golden chicken, peak-season tomatoes, and a glass of Chardonnay that makes August weeknights feel like something special. 🍋🍅🍷
